What's white tea?

White tea is one of the six major types of tea in China. It is a slightly fermented tea with minimal processing and undergoes only the drying process after being picked without rolling. The types of white tea vary according to different regions, tree species, and picking standards for fresh leaves. It can be divided into two types: bud tea and leaf tea. 

 

  Bud Tea is white tea made from the fat and strong tea buds coated with full white fuzz at the top of the white tea tree. It has a unique pekoe fragrance. Examples: Silver Needle White Tea.

  Leaf tea: White tea is made from one bud and tea leaves of the tea plant. It has a refreshing, floral, sweet fragrance. Examples: White Peony Tea (Baimudan tea), Shou Mei Tea, etc

What's Shou Mei tea?

Name of Shou Mei, Shou means longevity, and Mei means eyebrow. The name comes from its leaf shape that looks like a long-living man’s eyebrow. Shou Mei White Tea is from Fujian Province, China. It is a mix of upper leaf and tips, and this furry white tea has a stronger flavor than all white teas. It is a third-grade white tea.

White tea is divided into spring tea and autumn tea. Everyone knows that the output of Shou Mei is large, but most of the ones seen on the market are autumn tea. The aged tea of Spring Shou mei tea is as rare as the silver needle. This Shoumei is not only an aged spring-aged Shou mei white tea but also organic white tea. The tea leaves were picked from an organic white tea garden above 600 meters. Since 2015, this premium Shou mei has been properly improved, enhancing the taste and fragrance after 9 years of aging. We say: "One year white tea, three years medicine, seven years treasure". After aging, very healthy compounds, such as flavonoids, have increased in this Shou mei white tea.

Tea shape: Dried tea leaves: The cords are thick and black, and the golden pekoe white fuzz is exposed. Brewed tea leaves: the bottom of the leaves are very shiny, soft to the touch, and elastic.

The active compounds in white tea, such as tea polyphenols, catechins, caffeine, amino acids, and flavonoids, will be further enhanced during storage. The pure tea properties gradually transform into medicinal properties with health-care functions, provided the quality and storage conditions of the tea are good.

How to brew Shou Mei?

some key points you may need to pay attention

tea-to-water ratio of 1:30

water temperature: boiled water

teaware: Gaiwan or Nixing clay teapot,  Yixing clay teapot

water: spring water/purified water

First to fourth brewing: use 100°C water (212℉), pour water along the wall of the Gaiwan at fixed points, wait for 10-15 seconds, and then pour out the tea soup.

After the fourth brewing, use 100°C water (212℉), pour water along the wall of the Gaiwan at fixed points, wait more than 15 seconds, and then pour out the tea soup.

After several brewings, you can remove the tea from the teapot and boil it again in a kettle. Please remember to pour hot water, not cold water, into the kettle to boil the used tea. You will see that the tea is fragrant and even sweeter than when brewed in a teapot.
