Junshan Silver Needle(Junshan Yinzhen) yellow tea is considered to be the rarest tea in China and one of the top 10 famous teas in China. It is a yellow tea produced on Junshan Island in Dongting Lake, Yueyang, Hunan Province, China. It is as thin as a needle, so it is called Junshan Yinzhen.

What is the yellow tea?

The production process of yellow tea is similar to that of green tea, with the steps of withering, rolling and drying fresh leaves. However, yellow tea has an additional "heaping for yellowing" process, a light fermentation. Yellowing is the key step in the production of yellow tea. The polyphenols in the tea leaves are partially oxidized through the action of moisture and heat, and the leaves have turned yellow. After drying, the tea tastes mellower than green tea and has less coldness, forming the unique quality of yellow tea.

The raw materials of this yellow tea come from Junshan in Hunan, also known as Dongting Mountain, which is an island in Dongting Lake in Junshan District, Yueyang City, Hunan. The island has fertile soil, abundant rainfall, and a humid climate. In spring and summer, the lake evaporates, the clouds are filled, and the island is full of trees. The natural environment is suitable for the growth of tea trees.

Why is Junshan Yinzhen precious?
1. Tea leaves are not picked in nine situations: rainy days, frosty weather, open buds, purple buds, hollow buds, bent buds, insect damage, thin buds, and buds that are not of the right size.
2. Our tea picking requirements are very high, and the picking time is only 7-10 days before and after Qingming Festival. The length, width, and thickness of the leaves of Junshan Yinzhen yellow tea are all calculated in millimeters. One kilogram of Junshan Yinzhen requires about 150,000 tea buds, which means a tea farmer can only pick 200 grams of fresh leaves a day. It can be said that the yield is low, but the quality is high.

Brewing suggestions:

Pure and sweet soft water is the best for brewing Junshan Yinzhen, followed by distilled water and purified water.
Water temperature: boiled water cooled to 85℃(185℉)
Utensils: glass cup/glass pot
Step 1: preheat the utensils
Step 2: add 4g tea leaves(over 300ml water), add a small amount of water, wait for a while to moisten the tea leaves, and then add water to about 3cm from the edge of the cup.
Step 3: wait for 3 minutes and then taste
