Shui Xian is a type of oolong tea that originates from Fujian Province and refers to the cultivar used to make this tea and is known for its distinctive floral honey aroma and flavor.
Traditionally," Shui Xian" (also spelled Shui Hsien) - narcissus or daffodil. This great and rare oolong tea- Zhangping Shui Xian Tea has a long history, which can be traced back to the Yuan Dynasty (1279–1368) growing this tea, and during the Ming and Qing Dynasties, there were special small tea production factories. This tea has ever gained gold awards in the Panama Expo and Shanghai Expo.
The fermentation of Zhangping Shui Xian is light and semi-fermented. This only compressed oolong cake you can find in the Chinese tea market. It is wrapped in cotton paper, you can smell the pleasant orchid floral fragrance leaving on the cotton.
This Zhang Ping Shui Xian is made from large leaves, mostly still on stalks. These have been pressed into square cakes, each cake being around 8-10 grams in weight. This tea is lightly oxidized and it has also undergone a baking or roasting process. The baking imparts a lightly toasted character that brings out the more complex notes and results in a mellow flavor and soft mouthfeel.
Geographical advantage: The tea is from an alpine production area, with an altitude ranging from 500 to 900 meters. Due to the large temperature difference between day and night, many clouds and fog, and diffuse sunlight, the amino acid, chlorophyll, nitrogen-containing content in tea is high. The soil is mainly humic sand and gravel soil, with deep soil layers and suitable acidity. The ground is covered with dead branches and leaves, which has a high humus content, which is conducive to the growth of tea trees. No matter whether spring tea or autumn tea, they all have high freshness and unique floral aromas.

Brewing method:
Hot brewing:
Tea set selection: gaiwan (preferred) about 120-150ml
Recommended water temperature: around 100℃ just boiled water (212℉)
Amount of tea in a gaiwan: one small piece of tea cake
First step: Preheating your Gaiwan/teapot and rinse tea for 15s. Now we start first infusion, as it's compressed tea cake, we need about 20s to let tea stretch in gaiwan. Second infusion 20s. Third infusion 15-20s. Fouth infusion 15s. You can approriate adjust your steeping time deponding on your personal tatse.
Cold brewing: 3-5g/800ml 4-6H in refrigerator
