What is the Qixingzao Seven-Star Stove?
- The Seven-Star Stove: A Signature Drying Technique of Anhua Dark Tea
The Seven-Star Stove (七星灶) is a distinctive traditional drying technique used in the production of Anhua Dark Tea. Often regarded as the soul of dark tea craftsmanship, it is far more than a simple drying process. Through slow roasting over an open pinewood fire, it imparts a unique aroma, depth of flavor, and distinctive character to the tea.

- The Craft Behind the Seven-Star Stove
The Seven-Star Stove is a traditional brick-built stove featuring seven openings beneath its structure. Arranged like the seven stars of the Big Dipper in the night sky, these openings give the stove its name. This ingenious design helps distribute heat more evenly, allowing the tea leaves to dry uniformly while absorbing the subtle, distinctive fragrance of burning pinewood.

Only pinewood aged for at least three years is used. The bark is carefully stripped by hand to reduce excess resin and prevent an overpowering smoky aroma, allowing the tea to develop a more balanced and distinctive pinewood fragrance.

Alternating Heat and Moisture:
This process takes advantage of the physical principle that heat rises while moisture-laden air tends to descend. The rising heat from the pinewood fire gently dries the upper layers of tea leaves, while moisture from the upper layers moves downward, creating a continuous cycle of heat and moisture. This environment encourages the transformation of the tea's internal compounds, contributing to its distinctive flavor and character.

Flavor Development: Pinewood Aroma and a Rich, Mellow Taste
The Seven-Star Stove plays a crucial role in shaping the final quality and distinctive character of Anhua Dark Tea.
1. Distinctive Pinewood Aroma
Slow roasting over an open pinewood fire allows the tea leaves to naturally absorb the subtle fragrance of pinewood, developing the signature pinewood aroma (松烟香) associated with traditionally processed dark tea.
Rather than an overpowering smoky smell, it is an elegant, delicate woody fragrance that harmoniously blends with the tea's natural aroma.
2. A Richer, Smoother Taste
Prolonged slow roasting helps mellow the tea's raw, grassy notes and reduce unwanted aromas, resulting in a smoother, softer, and sweeter liquor.
It also contributes to a more rounded and harmonious flavor profile.
3. Greater Potential for Aging
The gradual drying process helps preserve the tea's desirable chemical components and provides a foundation for further transformation during storage.
With proper storage and aging, the tea can gradually develop greater depth, complexity, and mellowness.
